I’m an office manager for a law firm. I live with three roommates I adore and my mom is my best friend & biggest supporter!

Habits & Mindset

What motivated you to try keto?

I have psoriatic arthritis and my insurance started denying my medication. So I looked into alternatives for controlling my PsA, and stumbled upon keto. I saw the crazy weight loss people were experiencing and read many claims of people with the same disease doing really well. They all attributed it to keto. I decided to give it a try, really not expecting much, but have been so pleasantly surprised!

How often do you cheat on keto?

I try my best to not cheat intentionally. But that being said, everyone is human and will slip up. I use the spoons theory with my PsA (you only get so many spoons a day), and kind of view keto the same way. If I know I want to go out with a friend for beers or a certain food, I use my carbs when they matter. It’s all about planning your day to make it work for you. But if I go over my carbs a one day, I don’t beat myself up for mismanaging my carb intake, because again, everyone is human. It’s what you do the next day that matters.

How do you get (back) into ketosis?

I can’t start off slowly. I’m one of those people who has to jump in head first to make things stick. When I quit smoking, I had to just go cold turkey. Same with carbs. I will fast (water only) when I really feel it’s necessary, mainly to break a bad stall.

Do you track your weight/ketones/blood glucose/macros or anything else?

I track my weight using Happy Scale and my macros with MyFitnessPal. Happy Scale makes my weight loss less intimidating by breaking it up into milestones for me/ MFP is great for keeping track of my macros, which keeps me on target.

How supportive were your friends & family when you started?

I was pretty hush-hush about it when I first started, but as I started telling people and as the weight started coming off, I was amazed at the support I got. My mom and roommates especially!!

Has your weight loss ever stalled?

Everyone will stall. It’s natural and it happens. The first few times I panicked and was convinced I was doing something wrong. Now I know that I just need to be patient and it will start moving again. When it does stall though, I make sure I’m drinking enough water. That’s usually the reason. So if it’s a bad stall (i.e more than two weeks), I do a short 24 hour water fast, which has always gotten things moving again.

What other benefits have you noticed?

The main other benefit I can talk about is how much better my joints feel and how much my skin has cleared up because of keto. I used to get awful psoriasis outbreaks, especially on my scalp and face. It’s easily 90% better from nothing but keto.

Did you encounter any obstacles to pursuing keto?

My biggest obstacle is coming up. I’m going to Disneyland in November, and I don’t know how strong I’ll be surrounded by so much amazing food!

Have you had any side effects to keto?

I had my gallbladder taken out a few years ago. So when I first started keto, the increase in fat made me suffer from awful diarrhea. But after a few weeks, my body settled in and now that’s rarely a problem. The biggest thing I can stress is to have patience and to trust that your body will figure itself out.

Food & Fun

What’s your typical day of eating look like?

I usually drink a protein shake for breakfast around 7:30AM. I’m a fan of the Premier Protein Banana & Cream from Costco. Lunch is usually around 1PM if I’m eating. I skip it a lot in place of a bigger dinner. It usually consists of a lunch meat/cheese combination, maybe some nuts if I’m especially hungry. As for dinner, it’s a toss up. My roommates are super supportive and usually keep my diet in mind when planning dinner. But when it doesn’t work out, I have Saag’s hot links on hand for emergencies.

What’s your favorite home-cooked keto meal?

Green Chili Chicken Bake. This stuff is so good! I know it’s served over rice in the pictures, but I eat it alone with a salad and I’m a happy camper. I don’t add the cumin because I’m not a fan, but that’s my personal choice.

What’s your favorite restaurant meal?

I hate to admit this, but it’s probably a Chipotle burrito bowl. I usually have at least one a week. I like 12 chicken, 12 steak with cheese, lettuce, hot salsa, and now queso if my macros allow it. It’s fast and delicious!

What’s your biggest non-keto temptation?

Bread was the hardest thing for me to give up. And sauces. I love trying sauces at different restaurants, but I’m never sure what’s in them anymore, so it’s easier to just avoid them.

Anything else you’d like your readers to know?

You CAN do this. Trust me, if I can, you can. Before keto, I was shy and quiet and never really stood up for myself. Now, I smile in public and talk to people. Keto will change your life for the better, if you let it. It’s work, but it’s work you owe to yourself.
